Aged. Forage Fattened.

When we say 100% grassfed, we mean it.  Our cattle, sheep & goats do not receive any supplemental grain products.  They are ruminant animals that are created to graze grass and forages.  This also means that they are not eating any genetically engineered organisms (GEO) or genetically modified organisms (GMO), just native pasture.  All of our animals eat a diet that is species-appropriate.  So that means that our omnivores (pigs & chickens) are eating non-GMO grains & seeds, forage, bugs, and occasionally milk from our farm as they were designed. 

   We are farmers first.  Our product is grass and any other forage that can be harvested by livestock.

   The animals harvest the different forages for us while they fertilize the fields.  We use a biodynamic approach to create a self-nourishing system.  This system reduces inputs.  It also enhances the nutrient value & life of the soil, plants and animals. The life of this soil is what gives the meat its characteristics.

    Livestock on this farm is harvested at a more mature age to allow the animals to naturally fatten and become full flavored. This may be more work, but we believe from our dining experiences and customer comments that it is well worth it.

   Grass finishing definitely takes patience as good things just take time. This is an art to properly finish animals on natural forages and this artist is usally dripping in sweat here in South Texas.

We never use superphosphate fertilizers or herbicides like roundup.  These can lock up a percentage of trace minerals in the soil making them unusable. Such practices also kill soil life resulting in sterile ground.  This can cause mineral deficiencies in the grass which will affect the health of the animals and ultimately the health of those who consume that meat.  Our permaculture and biodynamic practices result in no use of any chemicals on the land. 

It is also one of our biggest goals to keep the animals as stress free as possible. We believe this to be a major factor in the final qualities of the meat.

Baby animals are allowed to remain with and nurse their mothers, this allows them access to the best nutrition as well as comfort from the start.  Our calves, lambs, goat kids, piglets & chicks are treated in a humane way from birth. They all receive natural exercise while foraging.

Our animals are accustomed to a leader/ follower system.  Fred leads them to a fresh patch and they follow willingly.  We would never use or need an electric shocker prod.

There is no shortage of shade here on our farm.  Native trees are allowed to grow and naturally thin with help from intensive animal grazing. We do use a chainsaw occasionally but never any type of tree or brush herbicide.
   
Cattle do not need protection in South Texas winters but they do have pastures which form wind blocks.  The goats are able to take shelter in a barn as they do not like the rain or the cold.  Our sheep graze with the goats, so despite the fact that rain and cold do not bother them, they go to the barn for the night with the goats.  This also provides protection from predators.
